Diet with antioxidants

Spinach is one of the best sources of antioxidants. Spinach, swiss chard and beet greens have very high amounts of oxalates ( acids that body cannot process and are passed through urine ). As a result people who may be sensitive to oxalates may take smaller portions.

Today’s pick:

Spinach with Mushroom Salad

Ingredients:

5 to 6 Ounces of spinach

3/4 coup of sliced or diced mushrooms

1/2 cup of bean sprouts

1/2 cup of almonds

2 oranges

Wash spinach and mushrooms. Rinse sprouts, thoroughly. Trim spinach. Peel oranges and make sections.

Take a large bowl and mix all the ingredients. Use a service spoon / fork to mix them.

Dressing Ingredients:

2 to 3 tablespoons of non fat yogurt

2 tablespoons of fresh orange juice

1 tablespoon of lemon juice

10 gms of Mints leaves, finely chopped.

Separately mix the dressing ingredients to make a smooth dressing. Pour over the salad.

This makes Salad servings of 3 to 5

Diet Success with Summer Fruits

Chicken with Kale - antioxidant rich

5 servings

2 lbs (1 kg) kale
3 tablespoon olive oil
50 gms peeled garlic
6 chicken drumsticks - skinned
2 teaspoons of cummin seeds
2 teaspoons of ground turmeric powder
3 teaspoons fennel seeds
15 gms ginger
2 cups water
1/2 lb (225 gms) fresh tomatoes
150 gms (or a large) white onion
Rinse kale thoroughly. Chop Kale fine. Simmer kale for 25 minutes with salt.

Chop onions, garlic, tomatoes, and ginger. Do not mix them.

In a pan, put the oil, cummin seeds, turmeric powder and saute chicken for 5 minutes. Add garlic, ginger, tomatoes, fennel seeds and cook for another 3 minutes. Add salt and pepper to taste.

Add water and kale. Cover and cook for 12 minutes in low to medium heat.

Serve it with boiled rice.
